When we first arrived in Australia we knew quite literally no-one in Melbourne but thankfully a few months later my sister started kindergarten and mum became fast friends with some of the other kinder mums. Some26 years later these people have become more like family than friends to us, and last weekend we farewelled the childhood home of one of them with an afternoon tea, to whichI took along this passionfruit cheesecake slice.

The family had been in this home the whole time we have known them so it was full of lovely memories of the circus performances we would put on, the sleepovers we had and other childhood pursuits. There were plenty of summers I spent as much time there as we did at my own home, so it definitely felt like the backdrop of my childhood in many ways, so it was a bit sad to say goodbye! The cheesecake helped though!

Recipe: Passionfruit Cheesecake Slice (1)

The recipe is one I found on Tastewhich I slightly adapted

Ingredients List

For the base

  • 150g butter
  • 1/3 cup sugar
  • 1tsp vanilla essence
  • 1 egg
  • 3/4 cup plain flour
  • 2tsp self-raising flour
  • 1/4 cup milk
  • 1/2 cup desiccated coconut

For the topping

  • 500g cream cheese
  • 3/4 cup sugar
  • 1/2 cup sour cream
  • 2 eggs
  • 2/3 cup passionfruit pulp

Steps

  1. Preheat oven to 180C
  2. Beat together butter, sugar and vanilla until pale and creamy
  3. Add egg and beat well then fold in the flours, coconut and milk
  4. Line a slice tray and spoon in the mixture, smooth the top and bake for 15-20 minutes (until a skewer comes out clean)
  5. Reduce the heat to 160C
  6. Beat together cream cheese and sugar until smooth and creamy
  7. Add the sour cream and eggs and beat until well combined
  8. Pour in half the passionfruit and mix through then pour the mixture over the cooked base
  9. Pour the remaining passionfruit over the top and swirl through, then bake for 30 minutes, or until just set
  10. Leave to cool completely in the pan before cutting into slices
  11. Enjoy!

The cheesecake is light and creamy which I really love, with a slight tang to it from the delicious passionfruit. I really love the coconut in the base as well, it gives the whole slice a rather tropical feel! Sometimes cheesecake can be overly sweet but I think the addition of the sour cream helps to reduce the sweetness of this one, which is maybe a bad thing as I felt like I could have had more than one piece!

It’s nice and simple to make as well but looks fairly impressive, which would make this slice an excellent dinner party dessert that you can make ahead, or just a delicious afternoon tea treat!
